In other words, save (Ctrl+S) is same as export. Edited files are not saved on the same file on its own.There is no undo option for reverting individual operating but your changes are not saved unless you save them or export them.You can rearrange the pages by selecting and then drag and drop them to desired place.

You need to know the exact page numbers that you want to cut/merge. You cannot double click on a page and read its content. Keep in mind that PDFArranger is not a PDF viewer. PDFArranger displays the PDF docs on per page basis
